“Everything makes broth” — an Italian proverb meaning
every ingredient (even leftovers) has value, a mindful
approach to cooking and reducing waste.
Long before modern agriculture and global trade, people
in the Carpathian and Mediterranean regions relied
entirely on what their local environment offered.
In today’s fast-paced, globalized world, the traditions of
seasonal and mindful cooking are increasingly under
threat. Modern lifestyles, industrial food systems, and
mass production have distanced many people from the
natural rhythms that once guided the diets of our
ancestors. This creates several key threats: Loss of
traditional knowledge, Disconnection from nature and
food sources, Environmental impact, Economic pressure
on small farmers, Cultural homogenization.
The main threat to seasonal and mindful cooking today
is not the practice itself – it is that it is at risk of being
forgotten. As convenience and globalization reshape our
diets, the traditional wisdom of eating seasonally and
mindfully is becoming rare. Preserving these practices
means protecting our health, the environment, and our
cultural roots for future generations. To protect these
valuable traditions, we must consciously reconnect with
the principles that guided our ancestors.
Supporting local farmers and markets, learning about
regional and seasonal ingredients, and cooking at home
with care and gratitude are simple but powerful steps.
